Thanksgiving Apple Muffins

Thanksgiving Apple Muffins by Andi

1 ¾ cup flour

1/3 cup sugar

2 tsp. baking powder

¼ tsp. salt

1 egg

¾ cup milk

¼ cup veggie oil

1 can apple pie filling

1/3 cup vanilla extract

1 tblsp. Cinnamon

Bake on 400 for about 25 minutes.

    is the vanilla extract amount correct?

      YES. I always use an overabundance of vanilla in comparison to most peoples’ recipes and counter it with added sugar depending on who I’m making them for (some people find vanilla a little bitter). But so far, with this amount I’ve had a lot of compliments because you can really taste it (like vanilla bean cream, I want to KNOW its vanilla in there) especially when using Apple Pie filling instead of diced apples – gives it a more “Holiday” flavor.

      I also discovered that on my oven, these bake better at 30 minutes.
